Ingredients

  • Chicken Ingredients:
  • 2 2 Chicken Breasts

  • 3 3 eggs

  • 1/2 cup 1/2 gluten-free flour

  • cup gluten-free breadcrumbs

  • Oil for frying

  • Salt & cracked black pepper to season

  • Butter ingredients:
  • 100 g 100 unsalted butter

  • 2 tsp 2 fresh parsley (finely chopped)

  • tbs minced garlic

  • Pinch salt & cracked black pepper

Directions

  • Combine the ingredients in a bowl until thoroughly mixed. Take a small piece of cling film and shape the butter into a small log. Refrigerate until firm, then cut it in half lengthwise to create two batons.
  • Lay the chicken, smooth side down, between two pieces of cling film. Use a rolling pin to pound it to an even thickness. Place one baton of butter in the middle, trim edges if necessary, and add trimmings to the center. Fold the sides over the butter, then roll up the chicken, starting from the bottom and finishing with the seam side down.
  • Wrap the chicken log in cling film, twisting the ends tightly to form a firm log shape. Refrigerate for 4-5 hours or freeze for 30 minutes until the surface is firm to touch but not frozen solid.
  • Set up three bowls with egg, flour, and breadcrumbs. Coat the chicken in flour, shaking off excess. Dip it in egg, allowing excess to drip off, and then coat it in breadcrumbs, pressing to ensure adhesion.
  • Place the crumbed chicken in the fridge for 1 hour until it becomes firm to handle. Preheat the oven to 180°C.
  • Heat oil in a heavy-based pot. Carefully place the chicken in the oil and cook, turning once or twice, until it achieves a golden hue.
  • Transfer the chicken to a rack and bake for 12-15 minutes or until the internal temperature reaches 65°C. Allow it to rest for 2 minutes before serving with mashed potatoes and asparagus!
