Ingredients

  • Ingredients:
  • 2 2 large zucchini’s (grated)

  • 1 1 orange capsicum (grated)

  • 1 1 white onion (grated)

  • 2 tsp 2 fresh turmeric (grated)

  • 2 tsp 2 fresh ginger (grated)

  • 2 2 garlic cloves (sliced finely)

  • 1 tbs 1 curry powder

  • 1/2 tsp 1/2 cumin seeds

  • 1/2 tsp 1/2 coriander powder

  • 1/4 tsp 1/4 cinnamon powder

  • 1/4 tsp 1/4 nutmeg powder

  • 1/4 tsp 1/4 cardamom powder

  • tbs coriander root (diced finely)

  • 1/4 tsp 1/4 fennel seeds

  • 2 cups 2 apple cider vinegar

  • 1 tsp 1 salt

  • 1/2 tsp 1/2 white ground pepper

  • 1 cup 1 sugar

Directions

  • Use a mandolin or food processor to grate zucchini, onion, and orange capsicum.
  • Combine salt with the grated vegetables in a large plastic bowl.
  • Allow the mixture to stand for 2 hours or overnight.
  • The next morning, thoroughly rinse the mixture in a large strainer and let it drain well.
  • Transfer the shredded vegetables to a large, heavy pan and add the remaining ingredients.
  • Mix everything well and simmer for 30 minutes.
  • Pack the mixture into hot, sterilized jars and seal them.
