Ingredients

  • Ingredients:
  • 200 grams 200 tinned pineapple pieces in juice

  • 3-4 3-4 good tablespoons of barbecue sauce (I prefer using Gods of Sauces; any of their barbecue sauces are a killer)

  • 1 1/2 1 1/2 tins of Heinz baked beans

  • 1 tbsp 1 Gods of Sauces barbecue rub, Dust of the Gods, a good amount (alternatively, use: 1 teaspoon of coriander powder, 1 teaspoon of cumin powder, ½ teaspoon of paprika powder, and ¼ teaspoon of mustard powder)

  • 1 tsp 1 minced garlic

  • 1 1 onion, roughly chopped

  • 1 1 green jalapeno, charred and finely diced

  • 2 tbsp 2 coriander root, finely diced

  • Salt and pepper to taste

  • 3 3 rashers of smoked bacon, finely diced

Directions

  • Grab a skillet and set it to medium heat. Add your bacon and cook it until it’s lightly browned, then remove from the heat.
  • Get yourself an oven-proof dish. Add in your beans, onion, coriander root, spices, barbecue sauce, jalapeno, salt, pepper, and pineapple.
  • Mix everything well, cover with aluminium foil, and bake in the oven at 180°C for roughly 45 to 55 minutes.
  • If you’re camping, you can cook this on a stovetop or in a smoker for an even better flavour.
