Ingredients

  • Ingredients:
  • 2 breasts 2 Chicken breasts

  • 2 tbs 2 Gluten-free cornflour (1 tbs per breast)

  • A good splash of cold water

  • 1/2 tsp 1/2 salt

  • 1/4 tsp 1/4 white ground pepper

  • 1 tbs 1 tomato paste

  • 1 tsp 1 coriander powder

  • 1 tsp 1 cumin powder

  • 1/4 tsp 1/4 cinnamon powder

  • 2 tbs 2 curry powder

  • 1 tbs 1 minced ginger

  • 1 tbs 1 minced garlic

  • 1 1 onion (diced finely)

  • 1 cup 1 gluten-free chicken stock

  • 400 ml 400 coconut milk

  • Handful fresh coriander leaves (garnish)

Directions

  • Thinly slice your chicken and place it in a bowl. Add 2 tablespoons of cornflour, a generous splash of cold water, and a pinch of salt and pepper. Let it sit for 10 minutes.
  • Heat a skillet on high, pour in 2 tablespoons of oil, and cook half of the chicken on each side for about 1 minute. Once both sides are white to light golden, remove from the skillet and repeat with the remaining chicken.
  • Reduce the heat to medium-low, add 2 tablespoons of oil, and toss in diced onions. Cook for 2-3 minutes, then add garlic and ginger, cooking for an additional 2 minutes.
  • Introduce the spices, cook for 30 seconds, then add stock and tomato paste. Simmer for 3-4 minutes, followed by the addition of coconut milk. Let it gently simmer for another 4 minutes on low heat.
  • Season with salt and pepper, then add the cooked chicken. Simmer for approximately 4-5 minutes or until the chicken is thoroughly cooked.
