Ingredients

  • 2 cups 2 raw cashews, soaked in water for at least 8 hours

  • 1/4 cup 1/4 + 1tbs cold water

  • 1 1/2 tablespoon 1 1/2 gelatin

  • 1 1/2 tablespoon 1 1/2 lemon juice

  • 1/2 teaspoon 1/2 salt

  • 1/2 teaspoon 1/2 cream of tartar

  • 50-100 ml 50-100 cold water (for blending)

  • After soaking the cashews for 8 hours or more, drain them thoroughly. Transfer the soaked cashews to a blender and blend on high speed until smooth. You may need to scrape down the sides of the blender a few times to ensure everything is evenly blended.
  • In a small pan, add the cold water and gelatin. Heat gently on low, stirring continuously until the gelatin is fully dissolved. Once dissolved, pour the gelatin mixture into the blender along with the lemon juice, salt, and cream of tartar. Blend everything together until the mixture is completely smooth.
  • Add the 50-100 ml cold water if the mixture is too thick, this will help it blend better.
  • Line an 8×4 inch loaf pan with baking paper, then pour the mixture into the pan. Place the pan in the refrigerator and let it set overnight, or until the paneer is firm. Once set, cut the paneer into cubes or any desired shape and serve immediately.
  • This dairy-free paneer is perfect for incorporating into your favourite recipes or enjoying on its own!
