Ingredients

  • Ingredients:
  • Meat Layer:
  • 1 kg 1 half and half of beef and pork ground mince meat

  • 400 g 400 Italian tinned tomatoes

  • 1 1 glass red wine

  • Olive oil

  • 3 cloves 3 garlic, finely sliced

  • 2 medium 2 onions, diced

  • 1 1 bay leaf

  • Salt and cracked black pepper

  • 1 1 carrot, peeled, grated

  • 600 ml 600 gluten-free beef stock

  • Dried oregano and basil (to season)

  • sml handful fresh basil

  • 1 tbsp 1 tomato paste

  • Cheese Sauce:
  • 50 g 50 unsalted butter

  • 200 g 200 cheese (mix of cheddar and parmesan)

  • 2 tbsp 2 gluten-free plain flour

  • 500 ml 500 to 600 ml milk

  • Pinch nutmeg

  • Salt and pepper

  • Other Ingredients:
  • Gluten-free lasagna sheets

  • Additional parmesan and cheddar for sprinkling

  • PlateIT Foods Italian Chilli Oil

Directions

  • Prepare Meat Sauce:
  • Brown beef and pork mince in a hot skillet with olive oil, salt, and pepper until golden.
  • Remove the meat and set aside.
  • Reduce heat, add a drop of olive oil to the skillet, and sauté onions until translucent.
  • Add garlic, carrot, bay leaf, dried oregano, and basil. Cook for a few minutes.
  • Next, add tomato paste and cook for another minute.
  • Return the meat to the skillet. Season with salt, pepper, and more herbs.
  • Pour in red wine, and allow it to reduce.
  • Add beef stock and tinned tomatoes. Bring to a boil, then simmer for at least 1.5 hours.
  • Adjust seasoning to taste. Stir in a splash of milk and fresh basil. Let it cool.
  • Prepare Cheese Sauce:
  • In a medium-sized pan, melt butter over low-medium heat.
  • Add gluten-free flour and mix well.
  • Slowly pour in milk while continuously stirring until a smooth sauce forms.
  • Next, add the cheese and stir well.
  • Season with nutmeg, salt, and pepper.
  • Assemble Lasagna:
  • Preheat oven to 190°C (375°F).
  • In an oven-proof dish, layer meat sauce, lasagna sheets, and cheese sauce.
  • Repeat layers, ending with a cheese sauce layer on top.
  • Sprinkle additional cheese over the top.
  • Bake:
  • Place the dish on a baking tray to catch any drips.
  • Bake for about 1 hour or until golden brown and bubbling.
  • Serve:
  • Allow the lasagna to rest for a few minutes before serving.

    Hi Che, I have just discovered your site & am enjoying reading your recipes & will be having a crack at quite a few, however your Lasagne recipe is somewhat confusing. On reading the “what you need” & then the recipe ingredients there are several distinct differences…..eg the cheese sauce calls for ricotta & eggs but both are missing ftom the actual recipe.
    In addition, the method calls for the pasta to be cooked proor to assembly……then you used uncooked, instant lasagne in your video.
    I have routinely used the uncooked lasagne pasta sheets & find it works very well but I believe your meat sauce is not loose enough to work sucessfully & would result in a fairly dry textured lasagne.
    As a diagnosed Coeliac who strives to create GF food that is undetectably different from the
    “normal” version, I applaud you for creating this great site & I have become a follower……so I hope you appreciate that my comment comes from a constructive & encouraging base & that you can make a few tweaks to this posted recipe to eradicate the inconsistencies so that it is perfect & creates a great outcome for anyone thinking of giving it a go.
