Ingredients

  • Ingredients Salmon:
  • 300 g 300 palm sugar

  • Zest and juice of 2 limes

  • 4 4 kaffir limes leaves (finely sliced)

  • 1 tbs 1 minced ginger

  • 1 1 red chillies (seeds removed, thinly sliced on an angle)

  • 4 tbs 4 gluten-free fish sauce

  • 2 tbs 2 gluten-free light soy sauce

  • 2 tbs 2 vegetable oil

  • 4 4 Salmon fillets

  • Season with salt & white pepper

  • Ingredients Coconut Lime Rice:
  • Zest and juice of 1 lime

  • 2 tbs 2 desiccated coconut (dry-roasted)

  • 4 cups 4 cooked jasmine rice (washed 4-6 times)

  • Ingredients Thai Salad:
  • 1 1 cucumber (peeled and peeled into bands)

  • 2 2 red chillies (seeds removed, thinly sliced on an angle)

  • Small handful of rocket

  • 1-2 tbs 1-2 lime juice

  • Pinch salt

  • 2 tbs 2 desiccated coconut & rice (dry-roasted & lightly blended)

  • 1/2 1/2 Lime (garnish cut in half)

Directions

  • To begin, cook the rice. Combine the chili with 1 tablespoon of boiling water and set it aside for 5 minutes. Then, stir in the rind, juice, and coconut, mixing it into the hot cooked rice.
  • In a saucepan, place palm sugar and 150ml of water. Stir over low heat for 1-2 minutes to dissolve the sugar. Increase the heat to medium and continue to cook for 5-6 minutes until the mixture starts to caramelize. Add the rind, juice, kaffir lime, ginger, chili, and fish sauce. Cook for an additional minute, then remove it from the heat and set it aside.
  • Toast the coconut and rice from the Thai salad ingredients, and once toasted, allow them to cool. Afterward, lightly blend them and set them aside.
  • In a large non-stick frypan, heat some oil and add the fish. Cook each side for 3-4 minutes, then add the sauce and cook for an additional minute, making sure to baste the fish with the sauce.
  • Next, combine the salad ingredients and dress them with 1-2 tablespoons of lime juice.
  • To serve, place the coconut rice on plates, then top it with the fish and sauce. Serve alongside the salad and garnish with the coconut and rice mixture. Enjoy!
