A Taste of Chinese Cuisine

A Brief History of Crispy Chinese Lemon Chicken

The origins of Crispy Chinese Lemon Chicken can be traced back to American Chinese cuisine, where flavors are often adapted to suit Western palates. This dish gained popularity in the United States, with its sweet and tangy notes appealing to a wide range of taste preferences. Today, it’s a beloved staple in Chinese-American restaurants.

Creating Gluten-Free Crispy Chinese Lemon Chicken

Preparing the Chicken

  1. Begin by marinating your boneless, skinless chicken breasts in a mixture of gluten-free soy sauce, minced garlic, and ginger. Let the flavors meld together for at least 30 minutes, ensuring your chicken is infused with delicious seasonings.
  2. After marinating, coat the chicken with a gluten-free flour mixture. This blend typically includes a combination of rice flour, cornstarch, and your preferred gluten-free breadcrumbs, ensuring a crispy, gluten-free coating.
  3. Use a pan to fry the chicken in hot oil until it turns a beautiful golden brown. Once cooked, let the chicken rest on a paper towel-lined plate, which will help absorb any excess oil.

Preparing the Lemon Sauce

  1. In a separate pan, mix together lemon juice, sugar, and water, allowing the flavors to meld over medium heat. To create a velvety texture, thicken the sauce with a mixture of water and cornstarch, achieving that signature Chinese Lemon Chicken glaze.
  2. Incorporate a touch of lemon zest for an extra burst of citrus flavor. The result will be a balanced sauce that’s sweet, tangy, and perfectly gluten-free.

Bringing It All Together

  1. Once your chicken is ready and your lemon sauce is perfected, it’s time to marry the two. Toss the crispy chicken in the lemony glaze, ensuring each piece is thoroughly coated. This step creates an unforgettable combination of textures and flavors.
  2. Top your Gluten-Free Crispy Chinese Lemon Chicken with sesame seeds and chopped scallions for a delightful visual appeal and added depth of flavor.

Ingredients

  • INGREDIENTS CRISPY CHICKEN:
  • 600 g 600 chicken breast cut into 1-inch pieces

  • 1 large 1 egg

  • 2 tbs 2 light gluten-free soy sauce

  • 2 tbs 2 Rice vinegar

  • 1/2 cup 1/2 gluten-free corn starch

  • Oil (for frying)

  • INGREDIENTS LEMON SAUCE:
  • 1 tbs 1 sesame oil

  • 2 tbs 2 minced garlic

  • 1 tsp 1 minced ginger

  • 1/2 cup 1/2 gluten-free chicken stock

  • 2 tbs 2 light gluten-free soy sauce

  • juice of 1 lemon

  • 2 tbs 2 sugar

  • 2 tbs 2 honey

  • Season with sea salt & cracked black pepper

  • 1 tbs 1 gluten-free corn starch dissolved in cold water

  • 1 tsp 1 sesame seeds to garnish

  • thinly sliced green onions to garnish

  • lemon slices to garnish

Directions

  • For the Crispy Chicken:
  • Begin by whisking the egg, soy sauce, and rice vinegar in a large bowl. Add the chicken, ensuring it’s well mixed, and allow it to marinate for 20 minutes, keeping it covered.
  • In a large baking tray, place the cornstarch. Pour the chicken and its marinade into the cornstarch, coating the chicken pieces evenly. Lightly press the cornstarch around the chicken.
  • Heat the deep-fat fryer or wok. When the oil reaches 180°C (356°F), shake off any excess cornstarch and fry the chicken in batches, arranging them in a single layer. Cook for about 5-6 minutes, turning halfway during cooking, until they are golden and thoroughly cooked.
  • Drain the fried chicken on a plate lined with paper towels.
  • For the Lemon Sauce:
  • Heat the oil over medium-high heat. Sauté the garlic and ginger until fragrant, which should take about 30 seconds. Add the stock, soy sauce, lemon juice, sugar, honey, and a pinch of salt. Whisk the mixture and bring it to a simmer, allowing the sugar to dissolve.
  • Whisk the cornstarch mixture into the simmering sauce and stir until it thickens. Toss the chicken in the sauce until it’s evenly coated, which will take about 2 minutes.
  • Garnish the dish with sesame seeds, spring onions, and lemon slices. Now, it’s ready to serve. Enjoy your meal!
