Ingredients

  • Ingredients Pork Larb:
  • 500 g 500 Pork Mince

  • 4 tbs 4 vegetable oil

  • 2 2 Shallots (sliced thinly)

  • 2 2 Birdseye chillies (thinly sliced)

  • 1 tbs 1 minced garlic

  • 1 tbs 1 minced ginger

  • 2 2 palm sugar (crushed)

  • 2 tbs 2 lime juice

  • 2 tbs 2 gluten-free fish sauce

  • 2 Tbs 2 gluten-free light soy sauce

  • 3 Tbs 3 Thai Dressing Sauce (from Gods of Sauces)

  • Salt & pepper to season

  • handful fresh coriander, mint & basil leaves (remove stems)

  • Pork crackling to serve.

  • Ingredients Rice:
  • 3 Cups 3 Basmati rice (washed 4-5 times)

  • Ingredients Salad & Garnish:
  • 2 2 Red chillies (sliced thinly)

  • handful handful Mint leaves

  • handful handful Basil leaves

  • Lime

  • Thai Dressing Sauce

  • 200 g 200 Pork crackling (garnish & broken)

  • Rice Instructions:
  • Begin by washing and draining the rice. Allow it to sit in water for 10 minutes before cooking.
  • Add the rice and water to a pot and bring it to a boil.
  • Once boiling, reduce the heat to low, cover with a lid, and let it simmer for 14 minutes until the rice is perfectly cooked.
  • After cooking, turn off the heat and let it sit for an additional 5 minutes before serving.
  • Pork Instructions:
  • Heat 2 tbsp of oil in a wok over high heat.
  • Add the pork and stir-fry until it achieves a delightful brown color (4-5 minutes).
  • Combine the browned pork with shallots, chili, and garlic in a bowl.
  • Use a mortar and pestle to grind palm sugar, then stir in lime juice, gluten-free light soy sauce, and fish sauce, Thai Dressing Sauce.
  • Add the prepared sauce along with the remaining ingredients to the pork.

  • Salad Instructions:
  • Mix all salad ingredients together.
