Ingredients

  • Ingredients:
  • 3 cups 3 sugar

  • 395g 395g condensed milk

  • 4 cups 4 full cream milk

  • 2 cup 2 thickened cream

  • 2 Bunch 2 mint

  • 4 4 Kaffir lime leaves

  • 4 4 Zest of 4 limes, finely grated

  • 10 XL 10 eggs

  • 10 XL 10 egg yolks

Directions

  • Preheat the oven to 170°C (150°C fan-forced).
  • For the caramel, high-heat a saucepan with 1 cup of sugar and 1/2 cup water. Allow the sugar and water to melt without stirring, letting it boil until the mixture thickens into a syrup. Once the edges of the saucepan show a caramel color, gently swirl the pan and remove it from heat when the toffee turns a golden caramel hue.
  • Pour the toffee into individual flan dishes, swirling to cover the base of each dish. Set aside.
  • To prepare the custard, combine condensed milk, milk, cream, mint, and zest in a saucepan over medium heat. Bring the mixture just below the simmering point, turn off the heat, and let the mint, kaffir, and lime flavors infuse for at least 20 minutes. Remove the mint and kaffir.
  • Whisk the eggs and egg yolks with the remaining 1/2 cup of sugar until combined. Slowly add the milk mixture to the eggs, whisking gently to combine. Strain the mixture and pour it into the molds.
  • Place the molds into a deep baking dish and then put them in the oven, loosely covered with tin foil. Add very hot water to the baking dish, filling it halfway up the sides of the molds. Bake for 45 minutes or until the custard is set but still wobbly. Remove from the oven, cool, and then turn out into serving dishes.
