Ingredients

  • Ingredients Madras Paste:
  • 3 tbs 3 cumin powder

  • 3 tbs 3 coriander powder

  • 1 tbs 1 star anise

  • 1 1 ⁄2 tsp chilli powder

  • 4 tbs 4 garam masala

  • 4 4 black peppercorns

  • 1 tbs 1 ground turmeric

  • 1 tsp 1 tamarind paste

  • 1 tbs 1 white vinegar

  • 1/2 tsp 1/2 cinnamon powder

  • 1 tbs 1 red chilli (chopped)

  • 1 1 bunch coriander, chopped

  • 200 g 200 roasted peppers, from a jar

  • 1/4 tsp 1/4 fennel seeds

  • 3 3 cardamom pods (crushed)

  • 1/2 tsp 1/2 salt

  • Ingredients Chicken Biryani:
  • 2 tbs 2 vegetable oil

  • 1 1 onion, peeled and diced

  • 1 large 1 carrot peeled and diced

  • 2 tbs 2 minced garlic

  • 1 tbs 1 minced ginger

  • 2 tbs 2 Madras curry paste

  • 350 g 350 chicken breast (brine – 1 1/2 tbsp corn flour and cold water)

  • 1 1 ripe tomato, diced

  • 350 g 350 basmati rice (washed)

  • 700 ml 700 chicken stock

  • 2 large 2 handfuls of baby spinach

  • 2 large 2 handfuls of fresh coriander (sterns chopped finely and put in with onion, leaves at the end)

  • 120 g 120 frozen peas

  • season with sea salt and freshly ground black pepper

Directions

  • Method Madras Paste:
  • Toast all the spice seeds in a frying pan, put all ingredients into a food processor, and blend to a coarse paste, then transfer to a container.
  • Method Chicken Biryani:
  • Place a large, non-stick saucepan over medium-high heat and add the oil. When hot, add the onion and cook for 2-3 minutes. Add the carrot and cook for 2 minutes.
  • Stir in the garlic and ginger, then add the curry paste and cook for 1-2 minutes.
  • Add the chicken, stir well, then add the tomatoes, rice, stock, and seasoning. Stir again and bring to a simmer. Cover and cook over a low heat for 15 minutes.
  • Roughly chop the spinach and coriander, then add them to the chicken pan together with the peas. Stir well and cook for a further 2-3 minutes.
