  • Ingredients Beef Casserole:
  • 500 g 500 beef chuck (chopped into 1inch cubes)

  • 2 large 2 white onions (sliced thinly)

  • 3 tbs 3 garlic cloves (slightly crushed)

  • 1 large 1 a glass of red wine

  • 500 ml 500 gluten-free beef stock

  • 4 4 potatoes (peeled & chopped roughly)

  • 400 g 400 crushed tinned tomatoes

  • 2 2 carrots (sliced roughly)

  • 2 tbs 2 Gluten-free flour to dust meat

  • 1/2 cup 1/2 fresh parsley (chopped roughly)

  • 1 tsp 1 dried thyme

  • 1/2 tsp 1/2 cumin powder

  • 1/4 tsp 1/4 nutmeg powder

  • Oil

  • Salt & ground white pepper

Directions

  • Preheat the oven to a toasty 160°C (320°F).
  • Begin by seasoning your beef with a generous pinch of salt and pepper, followed by a light dusting of flour. Allow it to reach room temperature.
  • Grab a spacious ovenproof dish and place it on your stovetop over high heat. Add a tablespoon of oil and allow it to heat up.
  • Carefully add the beef to the dish, ensuring you achieve that rich, dark golden color. It may require doing this in batches, depending on the size of your dish. Once browned to perfection, set it aside.
  • Reduce the heat to low, adding another tablespoon of oil. Incorporate the onions into the mix, cooking them until they turn soft, slightly golden, and aromatic. This should take a bit of time. Add the garlic, letting it sauté for an additional two minutes.
  • Season the onions with a dash of salt, pepper, and dried thyme to elevate the flavors.
  • Introduce the spices into the concoction, following up with the wine, reducing it by half.
  • Toss in the tomatoes and allow them to simmer for an additional two minutes.
