Ingredients

  • Chicken Marinade Ingredients:
  • 2 2 chicken breasts, thinly sliced

  • 1/2 cup 1/2 plain natural yogurt

  • 1 tbs 1 minced garlic

  • 1 tbs 1 minced ginger

  • 1 tsp 1 garam masala

  • 1 tsp 1 turmeric powder

  • 1 tsp 1 ground cumin

  • 1/4 tsp 1/4 chili powder

  • 1 tsp 1 salt

  • 1 tbs 1 gluten-free cornflour

  • Salt & pepper to season

  • Sauce Ingredients:
  • 2 tbs 2 ghee (or 1 tbsp butter & 1 tbs oil )

  • 1 tbs 1 oil

  • 1 large 1 onion, finely diced

  • 1 tbs 1 minced garlic

  • 1 tbs 1 minced ginger

  • 1 tsp 1 ground cumin

  • 1 tsp 1 garam masala

  • 1 tsp 1 ground coriander

  • 400 g 400 crushed tomatoes

  • 1/4 tsp 1/4 chili powder

  • 1 tsp 1 salt & pepper (to taste)

  • 200 g 200 evaporated milk

  • 1 tsp 1 white sugar

  • 1 tsp 1 fenugreek seeds

  • 6 6 curry leaves (optional)

Directions

  • Marinate the Chicken:
  • Slice chicken breasts, season with salt, and combine with yogurt, spices, cornflour. Mix well. Leave in the fridge for 4 hours or overnight.
  • Sear the Chicken:
  • Sear chicken slices in batches in a pan with oil until lightly coloured on both sides. Set aside.
  • Prepare the Sauce:
  • In the same pan, add ghee and sauté onions until soft. Add garlic, ginger, spices, and tomatoes. Cook down, season, and add sugar. Simmer for 10-15 minutes.
  • Finish the Sauce:
  • Pour in evaporated milk, season to taste, and blend the sauce until smooth. Adjust thickness with water if needed.
  • Combine and Cook:
  • Return the blended sauce to the pan, add seared chicken, and cook for an additional 4 minutes.
  • Serve and Enjoy:
