Ingredients

  • Frozen oven chips, thick cut

  • 1 1 red capsicum, sliced

  • 1 1 yellow capsicum, sliced

  • 1 1 onion, cut into chunks

  • 2 2 red chilies, deseeded and sliced

  • 3 3 spring onions, cut the white part into 1-2 cm pieces and the green part finely sliced

  • 1 teaspoon 1 Chinese five spice

  • 1/2 teaspoon 1/2 garlic powder

  • 1/4 teaspoon 1/4 white pepper

  • 1 teaspoon 1 salt

  • 1 teaspoon 1 white sugar

  • Neutral oil

Directions

  • Instructions
  • Preheat your oven to 200C and place your chips on a baking tray. Cook according to package instructions.
  • While the chips are cooking, prepare all your other ingredients by slicing them as mentioned in the ingredients list.
  • Once your chips are done, heat a wok on high heat until it starts smoking.
  • Add a drizzle of oil and coat the entire wok.
  • Add the onion and garlic and sauté for about 30 seconds.
  • Stir in the capsicums, red chilies, and the white part of the spring onions, then sauté for another 30 seconds.
  • Add the green part of the spring onions, turn off the heat, and mix in the spices. Cook for another 10 seconds.
  • Depending on the size of your wok, either add the chips directly to the wok or transfer everything into a large bowl.
  • Toss well to coat the chips in the seasoning and vegetables.
  • Serve immediately with my chippy curry sauce.
