  • For the Sauce:
  • 1 bulb 1 roasted garlic

  • 1 1 shallot, finely diced

  • 300 ml 300 dairy-free cream (not dairy-free use normal)

  • 100 ml 100 gluten-free chicken stock (not gluten-free use normal)

  • 200 grams 200 cauliflower, cut into florets

  • olive oil

  • Salt and pepper, to taste

  • fresh parsley, chopped

  • For the Pasta:
  • Gluten-free pasta (amount per packet instructions)

  • 1 cup 1 Reserved pasta water (1 cup)

Directions

  • For the Pesto:
  • Place all dry ingredients (herbs, pine nuts, cheese) into a blender.
  • Blend while slowly adding olive oil until the desired consistency is reached.
  • Season to taste with salt and pepper.
  • Set aside.
  • For the Cauliflower:
  • Roast the cauliflower florets with a bit of olive oil, salt, and pepper until nicely browned and tender.
  • For the Sauce:
