Ingredients

  • Ingredients for Peri Peri Butter:
  • 200 grams 200 dairy-free butter (or regular if preferred)

  • 100 grams 100 roasted capsicum (from a jar is fine)

  • 1 1 Zest and juice of one lemon

  • 2 tablespoons 2 red wine vinegar

  • Sea salt and cracked black pepper, to season

  • 2 2 red chillies, roughly chopped

  • 2 teaspoons 2 smoked paprika

  • 2 teaspoons 2 minced garlic

  • 2 teaspoons 2 ground cumin

  • Ingredients for Peri Peri Spatchcock Chicken:
  • 1 1 whole chicken

  • Olive oil

  • Sea salt

  • Cracked black pepper

  • Instructions
  • Get yourself a blender and pop all the ingredients except the butter into it. Blend well until smooth. Stop the blender, scrape down the sides, and blend again to ensure everything is mixed evenly.
  • Next, add in your butter and blend until fully combined. The mixture should turn a nice pale, smoky red colour.
  • Once mixed, get yourself some cling film. Scoop the mixture onto the cling film, then roll it into a log shape. Seal it tightly and pop it in the fridge until it is set.
  • First, prepare the chicken. Start with one whole chicken. Using sharp kitchen scissors or a sharp knife, cut along each side of the chicken’s spine and remove it. This can be reserved for making stocks later. Flip the chicken over, breast-side up, and press firmly in the centre of the breast to flatten it. This process ensures even cooking, so the breast meat doesn’t overcook before the legs are done.
  • Next, season the chicken. Drizzle olive oil over the skin and season generously with sea salt and cracked black pepper. Turn the chicken over and repeat the seasoning on the underside.
  • Prepare the baking tray by lining it with baking paper and placing a wire baking rack on top. Place the spatchcocked chicken on the rack.
  • Preheat your oven to 190°C. While the oven is heating, prepare the Peri Peri Butter using the method provided in the earlier recipe.
  • Once the butter is ready, carefully lift the skin of the chicken and stuff the Piri Piri Butter underneath, spreading it evenly. Also, spread some butter on top of the skin for an extra flavour boost.
  • Place the prepared chicken in the preheated oven and roast for approximately 50 minutes. About halfway through cooking, remove the chicken from the oven. Use a pastry brush to glaze the chicken with the melted butter and juices collected on the baking tray for an extra layer of flavour.
  • The chicken is ready when its internal temperature reaches over 74°C. Use a meat thermometer to check the thickest part of the bird, usually the breast or thigh.
  • Once fully cooked, allow the chicken to rest for 8–10 minutes. This step locks in the juices and ensures maximum moisture and flavour in every bite.
