Ingredients

  • Ingredients:
  • 500 g 500 lamb mince

  • 1/4 tsp 1/4 ground cinnamon

  • 1/4 tsp 1/4 ground cumin

  • 1/4 tsp 1/4 chilli powder

  • 1 small 1 onion, minced

  • 2 tbs 2 minced garlic

  • 1 tbs 1 minced ginger

  • 1 1 lemon, zest

  • 1 tsp 1 salt

  • 3 tbs 3 flat-leaf parsley, chopped

  • Pinch black pepper

  • Ingredients Sauce:
  • 2 tbs 2 butter or oil

  • 1 1 onion, sliced

  • 1 tbs 1 minced ginger

  • 1/2 tsp 1/2 ground turmeric

  • 1/2 cup 1/2 coriander leaves, chopped

  • 300 ml 300 gluten-free vegetable stock

  • 1 tbs 1 gluten-free cornflour (mixed with a little cold water)

  • 1 1 lemon, juice

Directions

  • In a large bowl, mix lamb mince, cinnamon, cumin, cayenne pepper, minced onion, minced garlic, ginger, lemon zest, salt, parsley and black pepper. Roll the mixture into meatballs to the desired size.
  • Melt the butter or oil in a large pan over medium heat. Add onions and cook until translucent and then add the ginger and ground turmeric. Cook, stirring occasionally, for 5 minutes or until onions are golden brown.
  • Add the coriander, lemon juice, and gluten-free vegetable stock and stir to combine. Bring the sauce to a boil. Reduce the heat to medium-low, then add the cornflour mixture and cook for 1 minute. Next, add the meatballs, and cover the pot. Cook for 8-10 minutes.
  • Taste and season as needed.
  • Serve with rice.
