Ingredients

  • Ingredients:
  • 2 2 ripe avocados

  • 1 tbs 1 minced garlic

  • 1 1 red chilli (deseeded)

  • 2 tbs 2 lime juice

  • Season to taste with flaked sea salt & black cracked pepper.

  • 8 8 baby Roma tomatoes (cut into quarters)

  • 3 3 basil leaves (diced small)

  • 1 tbs 1 olive oil

  • 1 tbs 1 lime juice

  • 1/3 1/3 red onion (diced small)

  • 1 1 chorizo (sliced)

  • 2 2 eggs

  • 2 tbs 2 Vinegar

  • Pinch flaked sea salt

  • Pinch smoked paprika powder.

  • 2 slices 2 gluten-free bread

  • Butter

  • Toasted pine nuts

Directions

  • Begin by bringing a saucepan of water to a vigorous boil, adding a generous pinch of salt and 2 tablespoons of vinegar.
  • While the water is heating up, peel the skin and remove the pit from the avocado. Place it in a bowl and mash it with a fork. Add the garlic, lime juice, red chili, salt, and pepper. Mix everything thoroughly.
  • In a separate bowl, combine all the salsa ingredients and set it aside.
  • Cook the chorizo until it turns a light golden brown. Once done, remove it and place it on a piece of paper towel.
  • Toast the bread and set it aside.
  • Crack each egg into a small ramekin or cup.
  • Once the water is boiling, use a fork to create a whirlpool in the saucepan and gently pour one egg into the center of the whirlpool. Repeat this process with the second egg. Cook for 60-90 seconds.
  • Take the poached eggs out of the water and place them on a piece of paper towel.
  • On a plate, lay the toast. Spread the avocado mixture over the toast and then add the salsa, chorizo, and poached egg on top.
