Ingredients

  • Ingredients
  • 2 2 gluten-free puff pastry sheets.

  • 100 grams 100 goat’s cheese.

  • 50 grams 50 rocket & spinach

  • 1/2 small 1/2 red onion, finely sliced.

  • 1 1 roasted red capsicums.

  • Fresh basil.

  • 4 slices 4 prosciutto

  • 6 6 cherry tomatoes, cut in half.

  • Drizzle of balsamic vinegar

  • Salt and cracked black pepper to season.

  • Olive oil.

  • Tomato paste.

  • gluten-free flour, for dusting.

Directions

  • Instructions
  • Turn on the oven to 200ºC.
  • Dust some gluten-free flour onto a clean work surface and, using a rolling pin, roll out the pastry into a square, make the square the size you would like.
  • Place the pastry squares on a baking tray, leaving a space between each.
  • Next, to make a crust, fold 1 inch of the puff pastry from each end and side, brush with olive oil.
  • Using the back of a spoon, spread the centre of each square with tomato paste, but don’t spread it onto the edges.
  • Start by getting a bowl and popping in the tomatoes, red onion, some of the basil, rocket & spinach, red capsicum. Now, drizzle over the balsamic vinegar and a little olive oil and mix.
  • Layer on the prosciutto, red onion, goat’s cheese, cherry tomatoes, rocket, spinach, basil, and roasted capsicum.
  • Sprinkle with salt and cracked black pepper for seasoning.
  • Bake until the pastry is golden, and the veggies are beautifully cooked, 15 – 20 minutes.
  • Once out of the oven, garnish with fresh basil leaves and serve immediately.
