  • 300 grams 300 uncooked prawns, tailed and deveined

  • 1 1 Avocado

  • 3 3 Limes, cut in half

  • 1 tsp 1 minced garlic

  • 3 3 Tomatoes, deseeded and chopped finely for salsa

  • 1/4 1/4 Red onion, diced finely

  • 1-2 tbsp 1-2 of coriander

  • 1/4 tsp 1/4 cumin powder

  • 1/4 tsp 1/4 coriander powder

  • 1/4 tsp 1/4 dried oregano

  • 1/4 tsp 1/4 cinnamon powder

  • 1/4 1/4 smoked paprika powder

  • Salt and cracked black pepper to season

  • Olive oil

  • Small (100g) tin of black-eyed peas

  • Small (100g) tin of sweet corn

  • 1/4 1/4 Iceberg lettuce, shredded

  • Corn tortillas

  • 1 1 red chilli

  • Gods of Sauces – Demeter Hot Sauce

Directions

  • Begin by preparing the prawns. If they’re still tailed or not deveined, clean them up first. Next, add the avocado, minced garlic, and a generous squeeze of lime juice to a bowl, then smash with a fork. Season with cracked black pepper.
  • For the salsa, deseed and finely chop the tomatoes, then dice the red onion as finely as you like. Add chopped coriander root, diced red chilli, black-eyed peas, and sweet corn to a mixing bowl. Combine everything, but hold off on adding salt until serving time to keep the tomatoes from getting watery. Drizzle in olive oil, squeeze in more lime juice, and stir in the cumin, coriander powder, smoked paprika, cinnamon and oregano. Set this aside.
  • Warm up the corn tortillas in a dry pan. Stack them between layers of aluminium foil to keep them warm and prevent them from cooling down.
  • Heat a skillet over medium-high heat with a splash of olive oil. Cook the prawns until they turn pink and juicy, then season with a bit of cracked black pepper, salt, and a squeeze of lime juice.
