Ingredients

  • Ingredients Gluten-Free Bread:
  • 1 tbs 1 (2 x 7g packets) dried yeast

  • 1 tbs 1 sugar

  • 1 tbs 1 gelatine powder

  • 1 tsp 1 salt

  • 1 tbs 1 psyllium

  • ½ tsp citric acid

  • 300 g 300 Bread & Pastry Flour Blend

  • 3 3 egg whites

  • 60 g 60 mashed potato (cold)

  • ¼ cup olive oil

  • Sesame seeds

  • Ingredients Bread & Pastry Flour Blend:
  • 400 g 400 Chickpea flour

  • 400 g 400 potato flour

  • 200 g 200 fine white rice flour

  • 200 g 200 arrowroot

Directions

  • Baking bread from scratch is a rewarding experience. There’s nothing quite like the smell of freshly baked bread wafting through your kitchen. Whether you’re a novice or an experienced baker, our easy guide will help you achieve bakery-quality results with every loaf.
  • Step 1: Preparing the Flour Blend
  • Begin by sieving the bread and pastry flour blend to ensure a smooth, lump-free texture. This sets the foundation for your perfect loaf.
  • Step 2: Preparing the Tin
  • Take a 20 x 10 x 6cm (8 × 4 × 2½ in) bread tin and generously grease it with margarine. Line the tin with baking paper to prevent sticking.
  • Step 3: Preparing the Yeast Mixture
  • In a medium-sized glass or plastic bowl, combine ½ cup of hot water and ½ cup of cold water. To this, add the yeast, sugar, gelatine, potato, salt, and psyllium. Give it a light whisk to ensure all the ingredients are well-mixed. Cover the bowl and let it sit for about 15 minutes, allowing the mixture to rise.
  • Step 4: Completing the Bread Dough
  • Now it’s time to complete the bread dough. To the yeast mixture, add citric acid, flour, olive oil, and egg whites. Using an electric beater, mix the ingredients for 2 minutes until you have a well-combined dough.
  • Step 5: Allowing the Dough to Rise
  • Cover the bowl with a large plastic bag, creating a warm and cozy environment for your dough to rise. Let it sit for about 25 minutes. Afterward, beat the mixture for an additional minute and then scrape it into your prepared tin.
  • Step 6: Preheat and Final Rise
  • Preheat your oven to 220°C (430°F). Cover the tin with a plastic bag once more and leave it to rise for an additional 30 minutes, or until the mixture has risen to about 2½ cm (1 inch) from the top of the tin.
  • Step 7: Baking Your Bread
  • Place the tin on the lower oven shelf and bake for 30-40 minutes. The bread should be beautifully golden and sound hollow when tapped. Once baked, remove it from the oven and gently wrap it in a clean tea towel. It’s crucial to resist the temptation to cut into it until it has cooled.
  • Follow these steps, and you’ll be well on your way to creating delicious, homemade bread with the perfect texture and flavor. Happy baking!

Notes

  • The bread can take longer and will depend on your oven, it should sound hollow.
