  • 120 grams 120 risotto rice

  • 70 grams 70 caster sugar or honey

  • 850 ml 850 dairy-free milk (such as almond milk or soy milk)

  • 1/2 teaspoon 1/2 vanilla extract

  • 1/4 teaspoon 1/4 ground nutmeg (plus a extra for baking)

  • 1/4 teaspoon 1/4 ground cinnamon (plus a extra for baking)

  • 1/2 cup 1/2 blueberries (for serving)

  • 1/4 cup 1/4 almond flakes (for serving)

  • Extra ground nutmeg and cinnamon for sprinkling before baking

Directions

  • Preheat your oven to 150°C.
  • Grease a small ovenproof dish with a little bit of slightly melted dairy-free butter.
  • Place the pudding rice into the greased ovenproof dish.
  • In a saucepan, combine the dairy-free milk, vanilla extract, and 1/2 of the caster sugar. Heat the mixture until it is almost boiling, then remove it from the heat.
  • Pour the heated milk mixture over the rice in the ovenproof dish.
  • Scatter the remaining caster sugar over the rice mixture.
  • Scatter the remaining dairy-free butter in small bits over the top of the rice and milk mixture.
