Ingredients

  • Ingredients:
  • 600 ml 600 milk

  • 1 sprig 1 thyme

  • 600 grams 600 skinned white fish fillets

  • 50 grams 50 butter

  • 2 tablespoons 2 gluten-free plain flour (or regular)

  • 50 grams 50 thick coconut cream

  • Salt and pepper

  • 1 1 Juice and zest of 1 lime

  • Fresh coriander, chopped

  • 250 grams 250 young spinach leaves

  • 1 tablespoon 1 minced garlic

  • 1 tablespoon 1 minced ginger

  • 1/4 teaspoon 1/4 cinnamon

  • 1/2 teaspoon 1/2 allspice

  • 1/4 teaspoon 1/4 nutmeg

  • 1 1 onion, finely diced

Directions

  • Start by preheating your oven to 180 degrees Celsius. Warm your milk with the thyme until it boils, then let it infuse for 30 minutes off the heat. Next, poach your fish in the infused milk, then set aside.
  • Now, it’s sauce time. Make a roux with half the butter and flour, gradually add the milk, then stir in onion, ginger, garlic, spices, spinach, salt, pepper, coconut cream, and lime juice. Flake the fish into large portions, mix gently, then transfer to an ovenproof dish.
  • For the topping, mash cooked sweet potatoes with butter, allspice, nutmeg, salt, and pepper. Spread over the fish mixture, dot with butter, and bake for about 40 minutes until golden and bubbling.
