Ingredients

  • Ingredients:
  • 1 1 lemon (zest only)

  • Italian chilli oil (by PlateIT) to garnish

  • 1 tbsp 1 Vegan Parmesan or normal

  • 3 tbsp 3 Parsley

  • 3 3 Chestnut Mushrooms (diced finely)

  • 4 4 Gourmet mushrooms (keep biggish)

  • Gluten-free Pasta

  • 100 ml 100 Vegan cream or normal cream

  • 1 1 Shallot (diced finely)

  • 1 glass 1 Glass White Wine

  • 300 ml 300 Gluten-free Vegetable stock

  • Salt & pepper (to season)

  • 2 Cloves 2 Confit garlic or 1 normal

  • Olive oil

Directions

  • To prepare this dish, start by filling a large pan with water and adding a generous amount of salt and a splash of olive oil. Place the pan on the stove over high heat with a lid on until it comes to a vigorous boil.
  • While the water is heating up, take a small skillet and set it over low to medium heat with a splash of olive oil. Add in the shallots and finely diced chestnut mushrooms. Cook them until they become lightly golden, and the shallots turn translucent. Season with a pinch of salt and pepper while cooking. Next, add the garlic and cook for a couple more minutes.
  • Pour in the white wine and let it simmer until reduced by half. Then add the vegetable stock and again reduce it by half. Remove from the heat and stir in your vegan or regular cream. Return the skillet to the heat for a minute, taste and adjust seasoning as needed, then allow the sauce to thicken.
  • Meanwhile, cook your pasta according to package instructions, ensuring it remains al dente. While the pasta is cooking, sauté the gourmet mushrooms in a bit of olive oil, seasoning with salt and pepper, and set them aside on paper towels once done.
