Ingredients

  • Ingredients Chicken Adobo:
  • Chicken and Marinade:
  • 750 g 750 chicken thighs

  • 3 3 garlic cloves (minced)

  • 1/3 cup 1/3 (85ml) gluten-free dark & light soy sauce

  • 1/3 cup 1/3 white vinegar

  • 4 4 bay leaves (dried)

  • For cooking:
  • 2 tbs 2 oil

  • 3 3 garlic cloves , minced

  • 1 small 1 brown onion , diced

  • 1 1/2 cups 1 1/2 (375 ml) water

  • 2 tbsp 2 brown sugar

  • 1 tbs 1 whole black pepper

  • Serving:
  • 2 2 spring onions – sliced (garnish)

  • Ingredients Garlic Rice:
  • 3 Tbs 3 oil

  • 12 cloves 12 garlic (minced)

  • 4 cups 4 cooked rice (day old)

  • ¼ tsp salt

  • Pinch fresh ground white pepper

  • 1 1 spring onion – thinly sliced (for garnish)

  • Ingredients Cucumber Achara:
  • 2 2 cucumbers – peeled, deseeded and julienned_

  • 1 1 carrot – peeled and julienned

  • 1 small 1 red capsicum – peeled and julienned

  • 2 tbsp 2 sea salt

  • 4 4 cm ginger – peeled and julienned

  • 2 2 shallots – finely sliced

  • 1 cup 1 white vinegar

  • 100 g 100 white sugar

Directions

  • Adobo Preparation:
  • To craft the perfect adobo, start by marinating your chicken in a bowl with the marinade ingredients. Allow the chicken to soak up these delicious flavors for at least 4 hours or, even better, overnight.
  • Searing the Chicken:
  • Heat a tablespoon of oil in a skillet over high heat. Remove the chicken from the marinade (keep the marinade) and place it in the pan. Sear both sides for about 1 minute each. Don’t worry about fully cooking the chicken; just get a nice sear on the outside.
  • Simmering the Sauce:
  • Set aside the chicken and heat the remaining oil in the skillet. Add garlic and onions, cooking for about 1.5 minutes. Then add the reserved marinade, water, sugar, and black pepper. Let it simmer, then reduce the heat to medium-high and simmer for 5 minutes.
  • The Chicken’s Return:
  • Add the chicken, smooth side down. Simmer, uncovered, for 20 to 25 minutes until the chicken reaches an internal temperature of 74°C. Turn the chicken around the 15-minute mark. The sauce should reduce into a thick, jam-like syrup. If not thick enough, remove the chicken and let the sauce simmer to thicken, then coat the chicken in the glaze.
  • Perfecting the Rice:
  • Heat the oil in a wok or skillet over medium-high heat. Reduce to medium, add minced garlic, and stir-fry for 2-3 minutes until golden. Remove the garlic, leaving the infused oil behind. Add the cooked rice to the garlic oil, coating each grain with oil. Let it cook undisturbed for 3-5 minutes. Repeat the process until the rice is golden, crispy, and seasoned with salt and pepper. Garnish with fried garlic and sliced spring onions.
  • Cucumber Achara:
  • Create a zesty cucumber achara by tossing cucumber, carrot, and capsicum with salt, draining, rinsing, and then combining them with ginger and shallots. Simmer vinegar, sugar, and water, pour it over the vegetable mix, and refrigerate.
