Ingredients

  • Sauce Ingredients:
  • 1 1/2 cups 1 1/2 water

  • 1/2 cup 1/2 tomato paste

  • 1/4 cup 1/4 gluten-free light soy sauce

  • 3 tbsp 3 gluten-free hoisin sauce

  • 3 tbsp 3 brown sugar

  • 1 tbsp 1 rice vinegar

  • 1 tbsp 1 Gods of Sauces Korean Hot Sauce or to taste.

  • 3 tsp 3 garlic minced.

  • 1 tbsp 1 minced ginger

  • 2 tbsp 2 gluten-free cornflour

  • Filling Ingredients:
  • Oil or non-stick cooking spray

  • Sea Salt

  • 1 large 1 head of green savoy cabbage, cut in half, save a couple of leaves to pop into the filling, finely diced.

  • 1/2 1/2 carrot, shredded.

  • 1 cup 1 bean sprouts slightly chopped.

  • 300 g 300 ground pork

  • 200 g 200 beef mince, not lean.

  • 1 cup 1 cooked white rice.

  • 1 1 bunch of scallions white and green part divided, chopped, green part for garnish.

  • 2 tsp 2 garlic minced.

  • 1 tbsp 1 minced ginger

  • 1/4 cup 1/4 gluten-free light soy sauce

  • 1 large 1 egg (beaten

  • 2 2 tbsp black sesame seeds

  • Small handful of coriander, chopped.

Directions

  • Sauce Method:
  • Dissolve the cornflour in a little cold water.
  • Whisk the sauce ingredients together in a small saucepan.
  • Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 3 to 4 minutes or until it thickens.
  • Transfer ¼ cup of the sauce to a larger bowl that can hold the filling you’ll be mixing. Set aside the remaining sauce to cool.
  • Filling Ingredients:
  • Preheat your oven to 200°C. Line a baking dish with parchment paper and set it aside.
  • Start by bringing a pot of salted water to a boil. Carefully remove 12 outer leaves from the cabbage head, ensuring they remain intact, and then cut them in half.
  • Take 3-4 cabbage leaves at a time and immerse them in the boiling water, cooking for 1-2 minutes until they become pliable. Transfer the blanched leaves to a clean paper towel to drain and cool. Continue this process until all the leaves are prepared.
  • Now, in a bowl, combine the beef, pork, carrot, cabbage, coriander, 1 tbsp of sesame seeds, bean sprouts, rice, scallions, garlic, ginger, soy sauce, a pinch of salt, and the egg. Thoroughly mix all the ingredients.
  • To prepare the cabbage leaves, cut out the thick vein from each leaf in an upside-down V-shape. Place 1/12th of the filling mixture in the center of each cabbage leaf half.
  • Fold the bottom “flaps” up and over the filling, slightly overlapping them. Then, fold in the sides and roll up the cabbage leaf, creating a neat roll.
  • Arrange the cabbage rolls in the prepared baking dish. Pour the remaining sauce evenly over the rolls.
  • Cover the dish with aluminum foil and bake for 25 to 30 minutes. Allow the rolls to rest for 5 minutes before serving.
  • Before serving, drizzle the remaining sauce from the bottom of the baking dish over the rolls. Garnish with 1 tbsp of scallions and sesame seeds for an extra burst of flavor. Enjoy your delicious cabbage rolls!
