Ingredients

  • Ingredients
  • 4 4 chicken breasts

  • 1 tablespoon 1 mixed spices (oregano, thyme, basil, smoked paprika)

  • Salt, to season

  • Ground black pepper, to season

  • 300 300 -400ml gluten-free chicken stock

  • 2 tablespoons 2 olive oil

  • 3 3 garlic cloves, minced

  • 1 small 1 brown onion, finely diced

  • 1/2 cup 1/2 sun-dried tomatoes, finely sliced

  • 2 2 good handfuls of baby spinach

  • 1 1/2 cups 1 1/2 dairy-free cream (see my recipe for making dairy-free cream)

  • 1/4 cup 1/4 grated dairy-free parmesan (see my recipe for making dairy-free parmesan)

  • 1 tablespoon 1 fresh parsley

Directions

  • Instructions
  • Sprinkle salt cracked black pepper, and the spice mix over the chicken breasts. Ensure they are evenly coated.
  • Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil is hot, place the chicken in the skillet and sear on all sides until golden brown. Remove the chicken from the pan and set it aside.
  • In the same skillet, add another tablespoon of olive oil if needed. Sauté the finely diced onions until soft and translucent, then add the minced garlic. Cook for a minute or two until fragrant.
  • Add the sun-dried tomatoes to the skillet and cook for a few minutes until they soften. Then, add the baby spinach and stir until wilted.
  • Pour in the dairy-free cream and sprinkle the grated dairy-free parmesan into the skillet. Stir well to combine all the ingredients and create a creamy sauce.
  • Slowly and off the heat add in the chicken stock, the sauce wants to be a nice consistency, not too thick or thin.
  • Return the seared chicken breasts to the skillet, making sure they are submerged in the sauce. Pop a lid on and cook for another 8-10 minutes or until the chicken is cooked through and the sauce has thickened.
  • Pop over fresh parsley to garnish.
  • Serve your Dairy-Free Tuscan Chicken with mashed potatoes and a side of vegetables for a complete meal.
