Righto guys, we are officially open here at the Albany Entertainment Centre at The View Restaurant 🙌

We soft-launched last week, and now we’re up and running.
Opening hours:
• Thursday – lunch
• Friday – lunch & dinner
• Saturday – lunch & dinner
• Sunday – lunch

This Friday night we’ve got an Irish dancing crew in – dancing, live music, loads going on. The Irish know how to put on a show 🍀
Tickets are selling fast, so if you want to be part of it, jump on the website and book now, or head into the box office.

As most of you know, I’m 100% coeliac, so this menu is entirely gluten-free.
We do have some normal bread available, but I take ultra care that nothing is mixed up.

We’re running a lunch menu and a dinner menu – small, simple, and done properly.
So come give us a crack this weekend, or pop in over the next few weeks and see what we’re all about ❤️

Boxing Day done in the new pizza oven and bloody hell… the Gozney Arc XL is extremely impressive. I’ve already made some cracking gluten-free pizzas in the past, but I’m not even gonna talk about those — because what I’m making in this thing is next level.

Massive thank you to my wife for this Christmas present. She knows I’ve wanted one of these for a long time. And the best part? It’s not just for pizza. Veggies, steaks, chicken — you can cook the bloody lot in it. The heat, the power… unreal.

Now, quick warning: Yorkshire puddings? Yeah nah. Tried to crisp them up and they basically melted into oblivion. Didn’t survive. So maybe don’t put your Yorkies in a pizza oven that gets hotter than the sun. Lesson learned 🤣.

But pizzas — gluten free or not — absolutely frigging amazing. I even hit them with a quick spray bottle before they go in, bit of steam, and it puffs the edges up beautifully. Light, airy, thin crust, proper authentic-style pizza. Exactly how I like them.

Anyway, hope you’ve all had a great Christmas. 🍕🔥

What are you all doing for Christmas dinner?

This is what I’m doing this year, so chuck it in the comments and let me know what you’re cooking.

• Peri peri spatchcock chicken (brined, cooked in the pizza oven)
• Chimichurri Brussels sprouts (pizza oven)
• Miso & honey roasted baby carrots (sous vide, finished in the pizza oven, then blow-torched)
• Soy sauce & blue cheese broccolini
• Confit garlic & rosemary roast potatoes (pizza oven)
• Yorkshire puddings (yes… pizza oven)
• Spanish omelette for brekkie (pizza oven, with candied bacon)

Cheese board:
Pâté, chutney, cheeses, cured meats, fermented carrot, fruit

Dessert:
Crème brûlée (also in the pizza oven)

I like to have a bit of fun with Christmas dinner. I change it every year — I don’t do a traditional English Christmas, and I don’t really do a traditional Aussie one either. It’s more just a bit of a mixed bag of stuff that I actually want to eat.

And yeah… I know it’s probably going to be about 30 degrees on Christmas Day, so I might regret this choice — but hey presto, that’s life.😅🔥

You asked, I delivered — again. The famous miso corn purée. Somehow this little beauty is rated number one on Google… the most-searched recipe out of all the bloody things I’ve made. And honestly, it’s just a simple purée! But mate, it’s yum. Goes perfectly with duck, goes perfectly with chicken, goes perfectly with scallops… it’s just one of those sauces that never lets you down.

Ingredients:
3 corn on the cob, kernels removed
1 shallot, finely diced
2 splashes olive oil
100 ml vegetable stock (gluten-free if needed)
100 ml cream (dairy-free if needed)
1 tablespoon miso paste
White pepper, to taste
Salt, to taste (optional)

Directions:
Peel the corn and remove the kernels.
Finely dice the shallot.

Heat a skillet over low to medium heat and add a couple of splashes of olive oil.

Add the diced shallot and cook until translucent.

Add the corn kernels and cook for another 1-2 minutes.

Pour in 100 ml of vegetable stock and cook until reduced by half and the corn turns a bright yellow.

Pour in 100 ml of cream and stir.
Add the miso paste and season with white pepper.

Cook for 5 minutes on a medium heat.

Transfer the mixture to a blender and blend until smooth.

Using a sieve and a bowl, sieve out the corn mixture until you get a silky puree in the bowl. Discard the remaining solids.

Taste the puree and season with salt and more white pepper if required.
Reheat the puree if necessary or use it cold.

Serving Suggestions:
This miso corn puree is great for scallops, salmon, chicken, or as a base for soups. Enjoy!
